Chocolate Banana Muffins with Coconut Flour
Chocolate and ripe bananas flavor coconut flour muffins sweetened with a bit of honey for a delicious accompaniment to breakfast or an afternoon snack. These GAPS muffins are a bit indulgent yet also nourishing.

2 very ripe bananas
3 eggs
or 6 egg whites
3/4 C coconut flour
1/2 C yogurt or kefir
1/4 C honey
1/4 C cacao or cocoa powder
1 tsp baking soda
2 tsp cinnamon
optional
1/4- 1/2 C chocolate chips or chopped chocolate
optional
Instructions
Preheat oven to 350 F.
Mash bananas in a bowl with fork or potato masher (or use a food processor).
Stir in remaining ingredients until smooth.
Divide batter among 12 muffin cups.
Bake 20-25 minutes at 350 F.
Remove from oven and move muffins to a cooling rack or tip them a bit so the air can circulate around them.
