Chocolate Banana Muffins with Coconut Flour

Chocolate and ripe bananas flavor coconut flour muffins sweetened with a bit of honey for a delicious accompaniment to breakfast or an afternoon snack. These GAPS muffins are a bit indulgent yet also nourishing.

Equipment

  • 2 very ripe bananas
  • 3 eggs or 6 egg whites
  • 3/4 C coconut flour
  • 1/2 C yogurt or kefir
  • 1/4 C honey
  • 1/4 C cacao or cocoa powder
  • 1 tsp baking soda
  • 2 tsp cinnamon optional
  • 1/4- 1/2 C chocolate chips or chopped chocolate optional

Instructions
 

  • Preheat oven to 350 F.
  • Mash bananas in a bowl with fork or potato masher (or use a food processor).
  • Stir in remaining ingredients until smooth.
  • Divide batter among 12 muffin cups.
  • Bake 20-25 minutes at 350 F.
  • Remove from oven and move muffins to a cooling rack or tip them a bit so the air can circulate around them.
