Christmas Jam-- honey sweetend with no refined sugar

This cranberry jam, gently spiced, is sweetened with honey. Free of refined sugar and pectin, this Christmas jam is quick and easy to make.

Ingredients
  

  • 12 oz bag of cranberries, washed and picked over
  • 1 orange, zested and juiced
  • 1 lemon, zested
  • 1/2 C honey
  • 1/4 tsp cloves
  • 1/4 tsp cinnamon
  • 1/4 tsp ginger

Instructions
 

  • Pour the cranberries, orange juice, zests, honey, and spices into a saucepan.
  • Heat over low heat, stirring frequently, until the berries begin to release their juice.
  • Simmer the mixture for 20-30 minutes. The jam will thicken; keep stirring often so it doesn't burn.
  • Optionally, blend the jam to a smoother consistency with an immersion blender, blender, or food processor.
  • Remove the jam to a pint-sized jar. Refrigerate and use within a couple of weeks.
