Cultured Vanilla Ice Cream

Vanilla ice cream made with GAPS friendly ingredients (or non-GAPS options) and naturally sweetened makes a perfect GAPS treat. A sweet yet low sugar dessert, this easy ice cream recipe is perfect with toppings, atop another dessert, or all on its own!

Equipment

  • hand mixer or blender
  • ice cream maker

Ingredients
  

  • 2 C milk kefir or yogurt (or milk if not on GAPS)
  • 2 C cultured cream (or cream if not on GAPS)
  • 1/4-1/2 C raw honey
  • 1 T vanilla extract
  • dash salt
  • 6 egg yolks (optional)

Instructions
 

  • Combine kefir or yogurt (or milk if not on GAPS), honey, vanilla, salt, and egg yolks if using them in a large pitcher or bowl. Whisk or beat with a hand mixer until very smooth. (You can do this in a blender or food processor if you prefer.)
  • Add cultured cream (or fresh cream if not on GAPS). Mix just enough to incorporate thoroughly, but not enough to turn the cream into butter!
  • Add the ice cream mixture to the bowl of your ice cream machine and process as usual.
  • Scoop any ice cream you don't eat immediately into a freezer safe container, cover and freeze.

Notes

*calories are calculated without egg yolks and with the lower amount of honey!
