Sweetened with honey, free of gluten and grains, and fermented for digestibility, easy chocolate bread with cinnamon honey butter satisfies dessert wishes without being a big deviation from you healthy diet. Cinnamon adds a warm and comforting flavor suited to fall, winter, or anytime you are looking for comfort food.
Mix almond flour and kefir or yogurt. Cover and allow to ferment at room temperature for a day or two.
When ready to bake, preheat oven to 350°.
Mix all remaining ingredients into bowl with fermented almond flour until smooth.
Pour into greased loaf pan, smooth top, and bake 25-30 minutes, or until a toothpick inserted into loaf comes out with just a few crumbs on it.
Cool in pan for 10-15 minutes, then remove to a cutting board to finish cooling before slicing.
Serve plain, or with plain or cinnamon honey butter.
Notes
To make cinnamon honey butter:Soften 1/4 C (1/2 stick) good quality butter. Stir in 1 tsp. ground cinnamon and 1-2 T raw honey, or to taste. You can add a teaspoon of vanilla for extra yumminess!
