Easy Plain Chicken-- Fast Stove Top Recipe

This simple plain chicken recipe is more technique than recipe. Fast and versatile, follow these tips to prepare plain chicken breast so that it actually tastes good even without anything added. Then, serve it plain or dress it up any way you like. Chicken doesn't have to be boring!

Ingredients
  

  • 1 lb chicken breast or chicken tenders
  • 2 T cooking fat (coconut oil, avocado oil, duck fat, beef tallow, etc.)
  • salt to taste

Instructions
 

  • If your chicken breast pieces are very different in size, cut them to look approximately similar. Dry them off a bit with paper towel. (Optional.)
  • Heat a skillet over medium heat. Add cooking fat and heat for a few minutes until it is very hot. It will shimmer a bit or bubble, and a drop of water will sizzle on it.
  • Add chicken pieces so that they are not touching each other. (Cook them in more than one batch if needed.) Sprinkle lightly with plain salt.
  • Let the chicken cook without moving it for several minutes. When you see that the edges are cooked, peek underneath to see if they are browning. If not, or if they are still sticking to the pan, let them cook a little longer.
  • When the chicken is browned on the bottom, turn each piece over and let that side cook and brown.
  • Remove to a plate and let it cool for a few minutes before cutting into it so that the juices stay inside. Continue cooking until all the chicken is cooked.
