Easy Roasted Asparagus

Roasted asparagus is an easy, healthy side dish. Plain or following one of the three variations, serve this delicious vegetable recipe often!

Ingredients
  

  • 1 lb asparagus
  • 1 T olive oil
  • 1/2 lemon, juiced
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 425° F.
  • Wash asparagus and trim off the woody, fibrous ends.
  • Toss with olive oil and lemon juice; spread on parchment-lined baking sheet.
  • Roast asparagus for 10-15 minutes, or until it is tender but still bright green.
  • Serve with extra lemon, or with with suggested additions below.
