Gluten Free Cream Cheese Cookies

These easy cream cheese cookies are gluten free, grain free, and refined sugar free. You can even make egg free cream cheese cookies with this recipe! Keep them plain and simple, or dress them up with additional flavors. You may want to make a double batch!

Ingredients
  

  • 1 C grass fed butter, softened
  • 1 C cream cheese, softened
  • 1/4 C honey
  • 1 egg optional
  • 1 C coconut flour
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350° F. Line 2 baking sheets with parchment.
  • In a mixing bowl, beat the butter and cream cheese together until smooth and fluffy.
  • Add honey, vanilla, and baking soda and beat in.
  • Add coconut flour 1/4 cup at a time, blending until incorporated. Allow the dough to rest for 5-10 minutes. The coconut flour will absorb moisture and the dough will be easier to form into balls afterward.
  • Roll dough into about 24 balls. Bake one to make sure the cookie turns out the way you want it; see below for ways to fix it if it is spread too much or too little.
  • Bake the rest of the cookies for 10-12 minutes. They are done when the bottom edges are starting to brown. Let the cookies cool before removing from trays or serving. They will be fragile at first, but will become much sturdier as they cool.
