Gluten Free Ginger Walnut Cookies

Ginger walnut cookies with 2 kinds of ginger plus other cozy spices make these the perfect gluten free cookies to enjoy at Christmas or anytime through the winter months! Quick to make and vibrantly flavored, these grain free cookies are also low in refined sugar!

  • 1 cookie sheet

Ingredients
  

  • 1 C coconut butter
  • 2 eggs
  • 1/4 C coconut sugar or other sugar
  • 2 T molasses
  • 2 T coconut flour
  • 1 T fresh ginger, peeled and grated or minced
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 C chopped walnuts optional

Instructions
 

  • Preheat oven to 350° F.
  • Add all ingredients except walnuts to mixing bowl.
  • Mix thoroughly until smooth; stir in walnuts.
  • Set aside for a few minutes so the coconut flour absorbs moisture and dough thickens.
  • Scoop dough onto cookie sheet, preferably lined with parchment, and bake 12 minutes at 350° F. If desired, flatten them slightly with your hand or a glass.
  • Cool cookies at least partially before serving; they will become sturdier as they cool.
