This gluten free gingerbread is cozy and comforting at Christmas time and all winter long! Not only gluten free, but it is also grain free and low in sugar, but still delicious and quick to whip up with this coconut flour-based recipe.
Preheat oven to 350° F. Grease an 8" square baking dish.
Melt butter.
Whisk dry ingredients together in mixing bowl.
Add sour cream, applesauce, molasses, eggs, and melted butter. Whisk until smooth.
Pour batter into greased baking dish and spread evenly. If it is too thick, wet your hands and pat it into place. Allow batter to rest for 10 minutes or so. The coconut flour will absorb moisture and thicken up.
Bake for 30 minutes at 350° F, or until a toothpick emerges from the center with only a few crumbs.
