Don't miss out on Christmas cookies! These gingerbread cookies are gluten free, grain free, and low sugar. They are also quick and easy cookies to make-- you can have them ready in no time!
Preheat oven to 350° F. Line a baking sheet with parchment if desired.
In a mixing bowl, stir sugar into softened butter. Beat in molasses and egg until smooth.
Add applesauce, spices, coconut flour, and baking soda and salt. Mix well. Allow dough to rest for 5-10 minutes; the coconut flour will absorb moisture.
Roll dough into balls. Bake a test cookie for about 10 minutes or until the edges of the bottom of the cookie are browned. Adjust the dough if needed. (See instructions below.)
Bake remaining cookie balls. The cookies will be fragile and crumbly right out of the oven, but they will be sturdier after they cool.
