Add all ingredients except walnuts to mixing bowl.
Mix thoroughly until smooth; stir in walnuts.
Set aside for a few minutes so the coconut flour absorbs moisture and dough thickens.
Scoop dough onto cookie sheet, preferably lined with parchment, and bake 12 minutes at 350° F. If desired, flatten them slightly with your hand or a glass.
Cool cookies at least partially before serving; they will become sturdier as they cool.
