Healthy Homemade Peach Cobbler

Fresh peaches with a simple, from-scratch topping make a classic summer dessert. This sweet peach dessert doesn't actually require much sugar to be delicious! Dripping with peach flavor, you don't need gluten, grain, or refined sugar for this easy peach cobbler!

Ingredients
  

  • 8 peaches, peeled and chopped (about 6 cups)
  • 1 T honey
  • 1/2 lemon, juiced
  • 1/2 C coconut flour
  • 1/2 C sour cream (or thick yogurt)
  • 1/4 C melted butter
  • 1/4 C honey
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp vanilla
  • dash salt

Instructions
 

  • Simmer peaches with 1 T honey and lemon juice for about 10 minutes. Move peaches to 8 " square baking dish, leaving extra juice out. (Alternatively, mix fresh peaches with honey, lemon juice, and 2 T arrowroot or other starch and spread in baking dish.)
  • Mix coconut flour, sour cream, melted butter, honey, baking soda, vanilla, and salt in bowl. Spread over prepared peaches, or drop in clumps over the peaches.
  • Bake 20-30 minutes at 350° F. Cobbler is done when the top is browned. If using starch to thicken the peaches, make sure the peaches have released their juices and bubbled.
  • Cool for several minutes and serve plain or with whipped cream or ice cream.
