Naturally Sweetened Berry Sauce (Berry Coulis)

Simple, healthy ingredients form a quick, delicious sauce to enhance desserts and breakfast foods!

Equipment

  • 1 immersion blender or food processor optional

Ingredients
  

  • 1 quart berries of choice (4 cups)
  • 1-2 lemons, zested
  • 1/4- 1/2 C raw honey

Instructions
 

  • If using fresh berries, wash and sort out any damaged berries.
  • Heat berries over very low heat, with lid on, until they release juice. Take the lid off and stir every couple of minutes.
  • Once the berries have released their juice, remove the lid. Stir in the lemon zest. Increase the heat to medium and let the berries simmer for about 10 minutes. Stir every couple of minutes.
  • Remove the berries from the heat and allow to cool somewhat. If desired, blend with an immersion blender, regular blender, or food processor. You could strain at this point if you want.
  • Sweeten to taste with raw honey. Serve warm or cold. The sauce will thicken slightly as it cools.
