Quick Salmon Salad

Ingredients
  

  • 1 14.75 oz can salmon or similar quantity from smaller cans OR similar quantity of fresh salmon, poached and flaked (see above)
  • 1/3-1/2 C sour cream OR Greek yogurt OR mayonnaise
  • 1 stalk celery, diced
  • 1-2 T green onion, chopped OR use red or yellow onion
  • 1 tsp dried dill OR 1 T fresh chopped dill
  • 1/2 tsp pepper
  • salt to taste

Instructions
 

  • If using fresh or frozen salmon, poach that first and flake it with a fork.
  • Chop veggies and herbs.
  • In a bowl, stir the sour cream together with all the ingredients except the salmon.
  • Add the drained, canned salmon or the freshly poached and flaked salmon. Stir well to combine. Serve right away or store in the refrigerator and use within a day. See serving suggestions below.
