Simple and Nourishing Carrot Breakfast Sausage

Add grated carrot and onion, plus plenty of seasoning, to any ground meat for a nourishing, clean breakfast sausage patty the whole family will enjoy. GAPS compliant, grain and gluten free, allergy friendly, and adaptable to your taste!

Ingredients
  

  • 6 lb. ground chicken
  • 1 C grated carrot
  • 1/2 C onion
  • 2 T good salt
  • 1 T smoked paprika (use regular paprika for GAPS)
  • 1 T dried sage
  • 1 T toasted fennel seeds
  • 1 T onion powder
  • 1 T garlic powder
  • 1 tsp ground nutmeg
  • 1 tsp black pepper
  • preferred fat for frying

Instructions
 

  • Grate carrots and onion.
  • (Optionally, toast the fennel seeds in a skillet over medium heat for a few minutes to bring out the flavor.)
  • Mix ground chicken, carrots and onion, and all seasonings together in a large bowl.
  • Heat skillet well, add fat, and heat until the fat bubbles. Form patties and cook, turning after the bottoms have browned. (You can cover them with a lid to speed up the cooking, but they will not brown much. Leave the lid off if you want them to turn brown and caramelize a bit.)
  • Remove to a plate and either continue cooking more patties or refrigerate or freeze the remaining mixture.
