Add grated carrot and onion, plus plenty of seasoning, to any ground meat for a nourishing, clean breakfast sausage patty the whole family will enjoy. GAPS compliant, grain and gluten free, allergy friendly, and adaptable to your taste!
(Optionally, toast the fennel seeds in a skillet over medium heat for a few minutes to bring out the flavor.)
Mix ground chicken, carrots and onion, and all seasonings together in a large bowl.
Heat skillet well, add fat, and heat until the fat bubbles. Form patties and cook, turning after the bottoms have browned. (You can cover them with a lid to speed up the cooking, but they will not brown much. Leave the lid off if you want them to turn brown and caramelize a bit.)
Remove to a plate and either continue cooking more patties or refrigerate or freeze the remaining mixture.
