Simple Oven Roasted Chicken

butter, sliced (1/2 stick)

onion powder

dried oregano or sage
a bit more melted butter or oil, plus salt and pepper, for the top
Instructions
Turn the oven on to 425 F. Take the chicken out of its package and set in a roasting pan. Be sure any giblet packet or other packaging is removed!
Mix together the seasonings. Work them underneath the skin so they are spread around between the skin and the meat.
Slide the butter slices under the skin over the spices so they are trapped between the skin and the meat.
Brush melted butter or olive oil over the top of the skin, then sprinkle with salt and pepper.
Set in the oven for about 15 minutes per pound. Check with a meat thermometer if you like. You want to get to 165 F.
When the chicken is done, let it rest for 20-30 minutes for maximum juiciness before slicing.
