Simple Oven Roasted Chicken

It takes only a few minutes to prepare this simple oven roasted chicken. The result is a flavorful, juicy chicken the whole family will love!

Equipment

  • 1 roasting pan
  • 1 meat thermometer (optional)

Ingredients
  

  • 1 whole chicken
  • 1/4 C butter, sliced (1/2 stick)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried rosemary
  • 1 tsp dried oregano or sage
  • a bit more melted butter or oil, plus salt and pepper, for the top

Instructions
 

  • Turn the oven on to 425 F. Take the chicken out of its package and set in a roasting pan. Be sure any giblet packet or other packaging is removed!
  • Mix together the seasonings. Work them underneath the skin so they are spread around between the skin and the meat.
  • Slide the butter slices under the skin over the spices so they are trapped between the skin and the meat.
  • Brush melted butter or olive oil over the top of the skin, then sprinkle with salt and pepper.
  • Set in the oven for about 15 minutes per pound. Check with a meat thermometer if you like. You want to get to 165 F.
  • When the chicken is done, let it rest for 20-30 minutes for maximum juiciness before slicing.
