This quick, healthy southwest chicken salad makes an easy meal. Serve it plain, or add extra goodies.

Ingredients
  

  • 1 cooked chicken, shredded (about 6 cups)
  • 1/2 C sour cream (or yogurt or mayo)
  • 1/2 C salsa of choice

Instructions
 

  • Shred chicken. Taste it and add salt if needed. (About 1 teaspoon.)
  • Stir in salsa and sour cream.
  • Serve plain or add other ingredients (see below).
