2Cmascarpone (or mascarpone plus cream to equal 2 cups)
2Cfresh milk
2-12egg yolks from pastured eggs(optional)
1/4Choney
1Tinstant coffee
1Tvanilla extract
1tspalmond extract
dashsalt
1Tcocoa powder
Instructions
Combine mascarpone, milk, honey, coffee, extracts, and salt.
Blend together just until smooth. Do not over mix!
Pour ice cream into ice cream maker and process as the manufacturer directs.
When ice cream is ready, spread 1/4 of it into freezer container with a lid. Sift 1 teaspoon of cocoa powder over ice cream. Spread 1/4 of the remaining ice cream over the cocoa powder, dust with another teaspoon on cocoa powder, and repeat once more. Spread remaining 1/4 of ice cream mixture over the top, cover the ice cream, and set the container in the freezer.
Serve within a couple of hours. If serving later, remove from freezer to soften 15-20 minutes prior to serving.
